Spearmint tea: it
thirsts, it warms, it bucks up, it can be served in the morning,
after the meal at any time. A pleasure that we cannot refuse ever.

Green tea
Pieces of sugar
Fresh spearmint brigs

·Boil the
water.
Heat the teapot.
Drop the necessary quantity of green tea (a handful for a teapot
for 5 cups)
Moisten the tea with the equivalent of a glass of boiling water.
Infuse two minutes. Preserve this tea in a glass.
Drop a glass of water. Shake energically the teapot. Throw the water.
Drop the glass of tea in the teapot. Add boiling water. Put back
the teapot to boil. When it boild take it and add the sugar, the
leaves of a bouquet of spearmint. Infuse a few minutes.
Beafore serving, drop several times a glass of tea in, kepping the
teapot very high, and drop back into the teapot. You have to do
the same movement at least seven times. In winter, when there is
no spearmint we can drink the tea nature.
