  Tajine with prunes

 

   Ingredients

A spoon of ginger coffee
saffron or cumin
two spoons of grain coffee
½ glass of semolina sugar
5 spoon olive oil
a spoon of salt coffee
a sheep shoulder cut beforehand in big pieces
350g of clean stonned prunes mixed with water
almonds
3 onions
garlic
a spoon of cinnamon

   Preparation

Put two onions pan and fry them during 5 minutes. Add the salted and peppered meat and. Mix carefully, addin water to cover the meat. Cook gently.
Cook a part of the prunes in a pan. Let a moment untill they are half-cooked.
Add the sugar, the cinnamon and let them boil. Take the meat with the sauce and mix all in a pan.
Add the third onion cut in slices, and dust with two spoons of sugar, let a few minutes and put out the fire. Fry and strain the almonds in a pan and grill the grains in another.
Dress the meat and the prunes on the service plate, sprinkle with the sauce and decorate with the almonds and with the grains.
