This word designate sometimes the container (a plate in earth burned decorated in a conical cover) and the content (meat, chicken, fish stew and steamed vegetables).

The tagine is under different varieties is the basic food for the Marocans. It has to be cooked on wood fire in the traditional plate of burned earth. You can also cook home with gas inserting a heat difuser, or with electricity. Before sing the plate, think of soaking it in cold water. Taste and you will understand why the tajine is the traditional marocan plate.
