In Morocco the meals finish very frequently with
fresh fruits. Acording to the hous or to the area, they can be melon,
apples, straberries or watermelon. But you will be served many times
oranges salad.

Choose little beans, shell them. Put to boil in a
casserole a litre of water with oil, the coriander and the parsley
finely chopped, the salt and the spices. Add the little beans and
let it cook gently during 30 minutes to reduce the sauce. Sprinkle
with cumin. Serve the beans in a big plate. Decorate with the olives
and the zestes of crystallised lemon.
