For 4 persons
750 g of meat
a thin slice onion
a garlic clove
½ spoon of ginger coffee
½ spoon of salt coffee
½ packet of saffron
¾ litre of water
Cook gently the ingredients in a half-covered pot
during an hour then add and simmer 10 to 15 minutes: 1/3 glass of
mustard, ½ spoon of cinnamon coffee. Cook in salted water
500 g of prunes diluted with water during 2 hours, strain them and
break them with a fork. Keep them warm. Present the pieces of meat
in a tajïne or in a round plate covered with the prunes and
sprinkle with sauce. Dust with 25 g of sesame grains and 25 g of
almonds.
